Chicken Casserole

Chicken, bread, milk and mushrooms are combined to create a casserole that will please even the pickiest eaters. Submitted By: Hiatt’s Poultry, LLC

Ingredients

  • 4 cups Diced Chicken
  • 4 Eggs- well beaten
  • 8 slices Bread- cut crusts off
  • 2 cups Milk
  • ½ lb fresh Mushrooms
  • 1 can Mushroom soup
  • Soup:
  • ¼ cup Butter
  • 1 can Celery Soup
  • 1 can sliced water chestnuts
  • 1 jar (2oz) Pimento- cut fine
  • 8 slices Sharp Cheddar Cheese
  • 2 cups Buttered Bread Crumbs


Directions

  1. Line an 8X13 buttered pan with bread.
  2. Top with chicken.
  3. Cook mushrooms in butter for 5 minutes and pour over chicken.
  4. Add water chestnuts and dot with mayonnaise.
  5. Cover with cheese.
  6. Combine eggs and milk, pour over everything in the pan.
  7. Mix soup and pimento and spoon over pan.
  8. Cover with foil and store in the refrigerator overnight.
  9. Bake at 350° for 1 ½ hours. Uncover and sprinkle with crumbs. Bake additional 15 minutes.
